Now in my experience working in bakeries, German Chocolate Cake has always been a favorite dessert for the guys! Birthdays, grooms cakes, bar mitzvahs you name it! So when my son requested a chocolate cake with coconut I was less than surprised.
Rich, brownie like layers sandwiched between sweet and satisfying coconut and pecans, and I am sad to say I am now looking at the last piece, which I saved for my sons final cake breakfast!

Ingredients
* 3 cups flour, unbleached white flour
* 2 cups sugar
* 1/2 cup unsweetened cocoa powder
* 2 teaspoons baking soda
* 1 teaspoon salt
* 2 cups water
* 3/4 cup vegetable oil
* 2 tablespoons white vinegar
* 1 teaspoon vanilla extract
Instructions
Preheat oven to 350 degrees F.
1. Mix dry ingredients first, making sure to mix very well or aerate the flour.
2. Mix all wet ingredients and add to dry mix, mix on medium speed for two minutes until smooth.

4. Bake for 30 minutes or until tooth pick comes out clean.

Frosting
* 2 cups of unsweetened coconut milk
* 1/3 cup cornstarch
* 1/4 cup water
* 1 cup white sugar
* 1/2 cup vegan butter – I recommend using Earth Balance Vegan Butter
* 1/4 tsp fine salt
* 1 cup toasted and chopped and pecans, more if you so desire
* 2 1/2 cups unsweetened coconut flakes
* 1/4 cup pure maple syrup
* 2 tsp vanilla extract
Instructions
1. Pour the coconut milk in a saucepan and simmer until the liquid is reduced to about half the amount.
2. Mix together the corn starch and water until well combined, add into the reduced coconut milk.
3. Add the sugar, vegan butter and salt.
4. Simmer over medium heat until the mixture begins to thicken. Remove from heat and stir in the pecans, coconut, maple syrup and vanilla.
5. Cool for at least 30 minutes so that it has a chance to thicken, I prefer to make a day ahead so the day of the special event all I have to do is assemble.
